I've been on the hunt for a recipe to make some easy but yummy enchiladas. I combined a few different recipes and came up with one I love.
Ingredients:
corn tortillas 14-16
1 can red enchilada sauce (14 ounce)
1/2 cup beef broth
1/2 tbsp honey
cooked and shredded chicken (I use 2-3 chicken breasts depending on size)
grated cheese about 1 1/2 cups
1 tbsp chopped cilantro (optional)
Instructions:
1. preheat oven to 350 degrees
2. in a small pot mix enchilada sauce, beef broth, and honey. Let it simmer for 10 minutes.
3. pour a small layer of enchilada sauce mixture on the bottom of a 9x13 pan.
4. Heat your corn tortillas in the microwave until the are warm and pliable. If they are cracking when you try to roll them heat a little longer.
5. Spoon a small amount of sauce on one side of your corn tortilla. Add some chicken and cheese and roll up.
6. Once all of your tortillas are filled pour remaining sauce over your enchiladas. Sprinkle with cheese and cilantro.
7. Bake for 10 minutes or until cheese is melted.

September Visiting Teaching Printables
I think I say this every month but I absolutely loved this message. (you can find it here.) Today I'm sharing a few different print options that you are welcome to use.
My favorite way is to copy and paste in a word document and size to fit 4 on a page. Then print on cardstock. You can also save to your computer and upload to your favorite place to print photos. They are sized to fit a 4x6 print.
(My home printer does not do well with this background it may be best to have it printed somewhere)
This one has a little bit of everything.
This one would be beautiful framed. I will be posting additional sizes for this one later this week.
